Dark Chocolate Pot de Creme
This new take on the classic french pudding is super easy to make.
This stove top version is decadent, rich, and the perfect dessert for
all chocolate lovers. Try not to be tempted to lick the spoon!
Ingredients
9 oz. dark chocolate chips or chopped bar
How To Make

Combine the cream, milk, and half the sugar in a pot and
bring to a boil and then quickly remove it from the heat so it doesn’t boil over the sides of the pot.

In a mixing bowl, whisk together the egg yolks and the
remaining sugar. Slowly drizzle the warm dairy mixture into the egg yolks while vigorously whisking to be sure the eggs do not scramble. It may help to have one person whisk and one person drizzle the dairy. Once all the dairy has been added, strain the mixture into a pot.

Cook the mixture over medium heat stirring constantly with a rubber spatula. Make sure to constantly scrape the bottom and sides of the post so the eggs do not curdle. Cook until it thickens to the consistency of cake batter and coats the back of a spoon.

Place the chocolate in a mixing bowl and strain the batter into the bowl over the chocolate. Stir the chocolate until it melts and the batter is smooth. Carefully pour the batter into 6 ramekins and allow to cool on the counter and then store in the refrigerator until ready to serve.
